Joseph the protector

Today Joseph was in the kitchen and a jar of BBQ sauce fell out of the fridge and broke. He was so worried about baby Lewis that before he came to get me he built a barricade out of the benches and chairs in the kitchen to make sure that Lewis couldn't get past and get hurt on the broken glass. and he ran upstairs to get me and told me I needed to hurry because there was broken glass but to not worry because Lewis couldn't get to it because of the fort he had built. It was so cute and he sincerely loves and wants to protect his brother.

I was on the table and I fell and my body got broken, but it's not now. I'm not on the table now. It's not. It's not now. It's not broken.

Lewis says ta-too

Lewis loves to eat. He eats almost anything I put on his high chair tray. the other day I fed him a jar of baby food a bowl full of mush and then I filled up a bowl full of pasta salad to feed to him. As I sat down to feed it to him he said very"Tay-too" (Thank you). This was the first time I've ever heard him say this. he says Mama a lot and once in awhile he will say one of the kids names. He had this big excited grin and he was saying thank you even before I fed him his third serving of dinner. Funny boy!

Emilygrace being the mom

Emilygrace wanted me to walk up stairs with her today oh, but I was busy working in the kitchen. She started persuading me to come up with her. Finally she said, "if you come up, you can take a nap." In a sing songs voice that copied mine completely when I am trying to convince her to do something. I guess she knows the right carrot for her mom. That's one clever 3 year old.

Kevin's Salsa

Kevin's Salsa

10 Roma tomatoes halved
1 white onion sliced
5-6 cloves garlic
1-2 jalapenos halved and deseeded
(Broil all on a tray until slightly charred)
Then add:
2 tsp salt
2-3 limes juiced
1/4 bunch (add more if needed)
1 Chipotle pepper in adobo sauce

Pulse in blender for 10-15 seconds so that it's fine without making it too smooth. Serve warm.

Mango Butternut Squash soup

1 Butternut squash roasted, peeled, and pureed
3 mangoes pureed
1 1/2 cups cooked Jasmine rice
2 cups apple sauce
1 c coconut milk
1/4 cup whipping cream
1/4 tsp cinnamon, sage, nutmeg
Salt and pepper to taste
Roasted pine nuts for garnish

Combine all ingredients and cook on stovetop to desired temperature. Enjoy!

Skillet Cabbage Slaw

Aka - Mom's purple cabbage

1 slice bacon
1 small apple
2 cups shredded purple cabbage
1 Tbsp Vinegar
1 Tbsp Water
1 1/2 tsp sugar
1/4 tsp salt
dash of pepper
1/4 cup sour cream

In 1 quart saucepan, fry bacon till crisp drain. Reserve drippings; crumble bacon. Add 2 tablespoons finely chopped onion to bacon drippings and cook 2 minutes. Stir in vinegar, water, sugar, salt, and pepper. Bring just to boiling.

Add shredded cabbage and 1 small apple (pared and finely chopped); toss to coat. Cover and cook over medium heat 5 minutes or until cabbage just wilts. Stir in sour cream; top with crumbled bacon. Makes 2 or 3 servings.

**This is the originally recipe, but when we make it we use the whole head of cabbage with 1 package of bacon, and increase the other ingredients accordingly.

Dani’s Romaine Salad with Poppy Seed Dressing

1 head romaine or 1 bunch spinach (or combination)
Grated Swiss or Mozzarella cheese
Pomegranate
Craisins
Orange slices
Sugared pecans

Dressing:
¾ cup sugar
½ tsp. Salt
1/3 to ½ cup white vinegar
2 Tbsp. red onion
1 tsp. dry mustard
1 cup oil
3 tsp poppy seed

Sugared Pecans:
½ sq butter (1/4 cup)
½ cup sugar
1 ½ cups pecans

This is the recipe we used at the ward party last night. So many people asked me for the recipe, that I just decided to post it. Enjoy!
